Danny Hodge and Lou Thesz were the most athletic wrestlers I saw as a child . Both had runs in the Memphis , so I saw a lot of those two. They did  not do moonsaults , but their strength , speed , mat wrestling and body coordination  was off the charts. 

Later Koko Ware was  a great athlete . In his  prime  Ware had the best dropkick in he business . However Ware went to the WWF and got out of shape . Sadly  Ware never regain form.

Later Doug Furnas and the Steiner Brothers  really stood out from the pack.

I  will give a shout out to Nick Bockwinkle . Nick stated wrestling in the 1950's. In the 1980 's he remained in top physical condition and put on fantastic AWA title matches in his 50's. Nick was a pro , the man could have a great match with anyone.
